Tuile Cookie
A French tuile, named because of its traditional “roof tile” shape is a classic molded cookies prepared with a batter of egg whites, sugar, flour, and melted butter. This thin cookie batter is baked and molded by draping over a rolling pin, or it can be shaped into tulip cups, cones, and and cigars. The batter can also be shaped with a stencil. Variations of tuiles can be made by adding flavoring extracts including vanilla, nuts, or cocoa powder.
Method
Step 1
Whisk eggs whites to loosen them but do not froth
Sift the confectioners’ sugar and flour together and blend into the egg whites
Add the melted butter and cream
Rest the batter at least 4 hours or overnight
Step 2
Line sheet pans with parchment or silicon baking mats
Assemble molds for shaping the tuiles (cups, dowels, rolling pins, or stencils)
Spread the batter thinly and evenly into circles on the baking sheets
The batter can also be spread and shaped using a stencil mold
Step 3
Bake the cookies at 350°C/175°C for 9-10 minutes
Remove from oven and loosen the cookies from the sheet
Mold the cookies by draping over a rolling pin or cup, or by rolling with a dowel
Cool and store in an airtight container
