Chocolate Chip Cookies
Method
Step 1
Sift the flour and baking soda into a bowl and set aside
Cream the butter, granulated and brown sugar, and salt in a mixing bowl fitted with a paddle at medium speed
Add the vanilla and incorporate the eggs one at a time until blended
Scrape down sides of bowl and paddle
Step 2
Add the flour mixture and blend just until the flour is evenly mixed into the batter
Fold in the chocolate chips
Roll the batter in parchment logs about 1 ½”/ 4 cm in diameter and chill for 12-36 hours
Step 3
Pre-heat oven to 350°F/175°C with the rack positioned in the lower third of the oven.
Line sheet pans with parchment or silicon baking mats
Slice logs about 1/3”/1 cm thick and space 2“/5 cm apart
Bake for 10-12 minutes until the edges brown
Cool before storing in an airtight container
