Spritz Cookie
Spritz cookies are a soft batter made with eggs and flour that are garnished with fruit preserves or sanding sugar. Variations including additions of cocoa, spices including cardamom and cinnamon, or citrus zest.
Step 1
Combine the butter, sugar, and salt in mixing bowl fitted with a paddle and cream for 5-7 minutes until the mixture is very light and fluffy
Add the egg mixing for 1-2 minutes
Add the vanilla extract
Step 2
With a rubber spatula gently fold the flour into the batter in three stages just until mixed
Avoid over working the dough which activates the gluten
Place the batter in a pastry bag fitted with a star tip
Step 3
Line a sheet pan with parchment or a silicon baking mat
Pipe the batter into rosettes or fingers
Bake for 10-12 minutes until the edges brown
Cool before storing in an airtight container
