Chocolate Sauce
Use a soft chocolate ganache of 2 parts cream to 1 part chocolate with corn syrup to create a shiny glaze. This recipe uses dark chocolate but by adjusting the ratio, it can be prepared with milk or white chocolate.
Method
Step 1
Chop the chocolate, place in a bowl, and set aside
In a saucepan heat the cream with the corn syrup to a boil
Step 2
Pour over the chocolate and tap the bowl to allow the cream to settle into the chocolate
Let sit for a few minutes
With a rubber spatula, stir the mixture to blend the ingredients together into a uniform mixture
Hold warm for service
