Compound Butter

Compound butters are cold mixtures of butter, spices, and herbs. They are used to enhance grilled steaks, fish, and vegetables. Compound butters can also be used as canape spreads, to emulsify and finish a sauce (beurre monté), to finish a risotto or polenta, or served with bread.
