Soup Garnishes

Garnishes add color, texture, and contrast to a soup. A garnish may be a simple sprinkle of fresh herbs or an elaborate truffle custard for a consommé, but an inspired garnish will make a soup stand out better and create an exceptional tasting experience.

Guidelines for Garnishes

  • Start with ingredients that are specific to the soup – for example, broccoli florets for a cream of broccoli soup

  • Consider a variety of textures – for example, croutons, drizzle of herb infused oil, and grated cheese

  • Prep garnishes separate from the soup and add as the soup is plated

  • Adjust the seasoning of the garnishes to properly complement the soup

  • Serve garnishes at the correct temperature
